La Torre del Olivar es una atalaya defensiva de 180 metros de altura construida entre los siglos XV y XVI. Desde ella se pueden observar los ríos Miño y Barbantiño, así como las 11 hectáreas de la finca que comparte nombre con la atalaya y en la que se encuentran los viñedos que dan origen a nuestro protagonista de hoy.
Pazo do Mar Expresión 2020 es un monovarietal de Treixadura plantada en 2002 en bancales de suelos arcillosos con esquistos sedimentarios, en una ladera con vistas al Miño en la finca La Torre del Olivar. Tras una vendimia manual en cajas, las uvas se prensan, y el mosto fermenta en depósitos de acero inoxidable con control de temperatura. El vino tiene una crianza de cinco meses sobre lías en los mismos depósitos.
En copa se presenta de un color amarillo pajizo con reflejos verdosos. En su nariz destacan la fruta de hueso y las flores blancas, acompañadas de notas herbales. En boca es cítrico, con un toque mentolado, una nota golosa y un punto salino, en un trago medio, glicérico, con muy buena acidez y un final ligeramente amargo. Es un vino blanco muy agradable que, por unos nueve euros, te permite viajar a esos viñedos a los pies de una atalaya de 180 metros con vistas al río Miño.

La Torre del Olivar is a 180-meter high defensive watchtower built between the 15th and 16th centuries. From there you can see the rivers Miño and Barbantiño, as well as the 11 hectares of the estate that shares its name with the watchtower and in which are the vineyards that give rise to our today protagonist.
Pazo do Mar Expresión 2020 is a Treixadura single-varietal from strains planted in 2002 on terraces of clay soils with sedimentary schists, on a hillside overlooking the Miño River on La Torre del Olivar estate. After being hand harvested in boxes, the grapes are pressed, and the must ferments in stainless steel tanks with temperature control. The wine is aged for five months on its lees in the same tanks.
In the glass it shows a straw yellow color with greenish reflections. Stone fruit and white flowers stand out on the nose, accompanied by herbal notes. On the palate it’s citric, with a minty hint, a sweet note and a salty touch, in a medium, glyceric sip, with very good acidity and a slightly bitter finish. It’s a very pleasant white wine that, for about nine euros, allows you to travel to those vineyards at the foot of a 180-meter watchtower overlooking the Miño River.
