Ojo y Coíllo 2019

Hay vinos que seducen por su fase visual, muchos por la olfativa, casi todos por la gustativa y algunos, muy pocos, te enganchan ya en la “fase auditiva”. Y es que en cuanto oyes hablar de ellos a alguien que es capaz de transmitirte su esencia con palabras, sabes que sí o sí vas a querer probarlos.
Por eso cuando una tarde en Bodegabierta, José nos habló del primer vino de Miguel Castro Maíllo, un joven enólogo originario de Montilla formado en Cádiz, inmediatamente supimos que queríamos conocer su proyecto, y no dudamos en marchamos de allí con una botella de Ojo y Coíllo 2019 debajo del brazo.
Ojo y Coíllo es un monovarietal de Pedro Ximénez procedente de viñas propiedad de su abuelo trabajadas por Miguel de manera manual. Son viñas viejas conducidas en vaso y podadas (no podía ser de otra manera) siguiendo el método tradicional de Montilla que consiste en dejar varios pulgares alrededor de la cabeza de la cepa, cada uno con dos yemas: el “ojo y el coíllo”.
El mosto de las uvas de Miguel fermenta en viejas botas de roble americano que anteriormente han contenido fino, y se cría bajo velo de flor durante nueve meses, tras los cuales se retiran las lías y se llenan las botas hasta arriba para completar la crianza total del vino de aproximadamente un año.
Ojo y Coíllo 2019 se presenta en copa de un atractivo amarillo limón. En nariz manda la fruta blanca, acompañada de frutos secos y notas de panadería. Su boca es compleja, muy seca, intensa, con notas cítricas, amargas y salinas. Es un Pedro Ximénez diferente, muy interesante, mineral y sencillamente delicioso.
Hasta donde sabemos, por el momento éste es el único vino del proyecto de Miguel Castro Maíllo, pero ya sabemos que, si aparece otro, no necesitaremos ni la “fase auditiva” para querer catarlo.

There are wines that seduce by their visual phase, many by the olfactory, almost all by the taste and some, very few, hook you already in the «auditory phase». And it’s that because as soon as you hear about them from someone who is capable of transmitting their essence with words, you know that you’ll want to taste them.
That’s why when one afternoon at Bodegabierta, José told us about the first wine of Miguel Castro Maíllo, a young winemaker from Montilla trained in Cádiz, we immediately knew that we wanted to know his project, and we didn’t hesitate to leave with a bottle of Ojo y Coíllo 2019.
Ojo y Coíllo is a Pedro Ximénez single-varietal from vineyards owned by his grandfather and hand worked by Miguel. They are old vines driven in goblet and pruned (it couldn’t be otherwise) following the traditional method of Montilla which consists of leaving several arms around the head of the vine, each one with two buds called “ojo” (eye) and “coíllo”.
The must of Miguel’s grapes ferments in old American oak casks that have previously contained sherry, and is aged under “velo de flor” layer of yeasts for nine months, after which the lees are removed and the casks are filled to the top to complete the total aging of the wine for about a year.
Ojo y Coíllo 2019 shows itself in the glass with an attractive lemon color. White fruit dominates the nose, accompanied by nuts and bakery notes. Its palate is complex, very dry, intense, with citrus and bitter and saline notes. It’s a different Pedro Ximénez wine very interesting, mineral and simply delicious.
As far as we know, at the moment this is the only wine from Miguel Castro Maíllo’s project, but we already know that, if another wine appears, we’ll not even need the “auditory phase” to want to taste it.
