Hace años que Privat apostó por el cultivo ecológico, por la recuperación de suelos y la biodiversidad; en definitiva: por cuidar del entorno para así conseguir uvas de máxima calidad con las que elaborar sus cavas. De esta manera cuidan las 73 hectáreas de viñedo propio donde crecen las variedades autóctonas Xarello, Macabeo y Parellada junto con las internacionales Chardonnay y Pinot Noir; un viñedo situado en la Finca d’Almirall, en Castellví de la Marca, en la región barcelonesa del Alto Penedés. Con ellas elaboran cinco cavas de distintas crianzas y coupages, pero todos ellos de añada.
Atelier Gran Reserva es el buque insignia de la bodega. Cuenta Juan Antonio Montilla, enólogo de Privat, que este cava se elabora sólo en las mejores añadas, y compara la finura y elegancia de su burbuja con “la delicadeza inherente a los diseños de alta costura”, algo que ya insinúan tanto su nombre como su llamativa botella Pompadour, de porte hierático y esbelto cuello.
Privat Atelier Gran Reserva 2018 es un monovarietal de Xarello proveniente de la Finca d’Almirall, un viñedo de más de 60 años de edad situado a 350 metros de altitud que se cultiva en ecológico y se vendimia de manera manual. Tras vinificarse de manera convencional, tiene una crianza en rima de al menos 30 meses.
Atelier se presenta en copa con un color amarillo entre pajizo y limón. Su nariz, bien definida, está comandada por la manzana madura, acompañada de notas florales y aromas de panadería. En boca es fresco, amable, con una burbuja fina y elegante, bien integrada, en un trago ligeramente mineral, con un buen volumen y una levísma nota amarga final.
Es un cava muy interesante, con un buen precio para la calidad que ofrece, elaborado con el mismo cariño y cuidado que ponen las modistas en los diseños de alta costura que salen de su atelier.

Privat Atelier Gran Reserva 2018: A Cava seeking the maximum expression of Xarello from the Alto Penedés
For years, Privat has been committed to organic farming, soil recovery, and biodiversity. Their goal is to care for the environment to obtain grapes of the highest quality for their Cavas. To achieve this, they take care of their 73 hectares of vineyards, where native varieties such as Xarello, Macabeo, and Parellada coexist with international varieties like Chardonnay and Pinot Noir. These vineyards are located in Finca d’Almirall, in Castellví de la Marca, in the Alto Penedés region of Barcelona. They produce five Cavas of different aging and blends, all of them vintage Cavas.
Atelier Gran Reserva is the flagship of the winery. Juan Antonio Montilla, the winemaker at Privat, explains that this Cava is only produced in the best vintages. He compares the finesse and elegance of its bubbles to “the inherent delicacy in haute couture designs”, something that is hinted at by both its name and its striking Pompadour bottle, with its statuesque presence and slender neck.
Privat Atelier Gran Reserva 2018 is a single-varietal Xarello sourced from Finca d’Almirall, a vineyard over 60 years old, located at an altitude of 350 meters and farmed organically with manual harvesting. After conventional vinification, it undergoes at least 30 months of aging on its lees.
In the glass, Atelier presents itself with a color between straw yellow and lemon. Its well-defined nose is dominated by ripe apple, accompanied by floral notes and bakery aromas. On the palate, it is fresh and friendly, with a fine and elegant bubble that is well-integrated. It offers a slightly mineral sip with good volume and a subtle bitter note in the aftertaste.
This Cava is truly interesting, offering great value for the quality it provides. No doubt, it is crafted with the same care and attention as the haute couture designs that come out of a fashion atelier.
