Hoy es uno de esos días en los que tienes la fortuna de beber un poquito de historia, de la historia de los vinos del Bierzo, de los primeros pasos de la que hoy es una de las bodegas más prestigiosas de esta región del noroeste de España: Descendientes de J. Palacios. Hoy nos trasladamos al año 2003, a ocho pequeñas parcelas de un mismo paraje, San Martín, ubicado en la hoy famosa para el mundo vinícola villa de Corullón. Hablamos de laderas escarpadas, altitudes de entre 520 y 720 metros, orientación suroeste y suelos con arcillas cercenadas por gruesas láminas de pizarra, arenisca y cuarcitas.
Las uvas de este monovarietal de Mencía proceden de viñedos de entre 60 y 90 años conducidos en vaso, cultivados en secano, arados con mulas y vendimiados a mano. La fermentación tuvo lugar en un pequeño tino de madera abierto, con bazuqueos, y el vino se crió en cinco barricas nuevas de roble francés de 225 litros durante 17 meses para embotellarse sin filtrar y salir al mercado en otoño del año 2005.
Pero nuestra botella permaneció durmiendo hasta el verano de 2022, cuando decidió salir de la bodega subterránea en la que descansaba y permitirnos que la descorcháramos, que decántaramos su contenido y que nos dispusiéramos a degustar un poquito de historia.
Y la historia comenzó sorprendiéndonos con un color muy vivo, poco evolucionado, un color picota solo matizado por sutiles tonos teja al borde de la copa. Tras un poco de juego de muñeca, la nariz empezó a entregar aromas más propios, nuevamente, de un vino más joven, con una capa ligera pero nítida de fruta roja y negra sobre un fondo de ahumados, champiñón, cuero y carne, esa capa olfativa muy amalgamada tan característica de los grandes vinos bien conservados durante muchos años. En cuanto a la boca, como esperábamos, encontramos un vino claramente vivo, elegantísimo, sutil y sugerente, de taninos sedosos en extremo, sin ninguna estridencia, sin gran intensidad pero con esa longitud poderosa de los vinos que saben aferrarse al hipotálamo y trascender el gusto y el olfato o, como en este caso: aquellos que al beberlos te cuentan una parte de la historia; de la historia de los vinos del Bierzo.

Descendientes de J. Palacios San Martín 2003: Bottled history of Bierzo wines
Today is one of those days in which you have the fortune to drink a little bit of history, of the history of Bierzo wines, of the first steps of what is today one of the most prestigious wineries in this northwestern Spain Region: Descendientes de J. Palacios. Today we move to the year 2003, to eight small plots of the same place, San Martín, located in the village of Corullón, now famous in the wine world. We are talking about steep slopes, altitudes between 520 and 720 meters, south-west orientation and soils with clay cut by thick sheets of slate, sandstone and quartzite.
The grapes for this Mencía single-varietal come from vineyards that are between 60 and 90 years old, trained in goblets, dry farmed, plowed with mules and hand harvested. The fermentation took place in a small open wooden vat, with punching down, and the wine was aged in five new 225-litre French oak barrels for 17 months before being bottled unfiltered and released to the market in the fall of 2005.
But our bottle remained sleeping until the summer of 2022, when it left the underground cellar in which it rested. So we uncorked it, decanted its contents and got ready to taste a little bit of history.
And the story began by surprising us with a very vivid color, little evolved, a cherry color only nuanced by subtle tile tones on the edge of the glass. After a bit of swirling, the nose began to deliver more typical aromas, again, of a younger wine, with a light but clear layer of red and black fruit on a background of smoke, mushroom, leather and meat, a very amalgamated mix of aromas so characteristic of great wines that have been well preserved for many years. And for the palate, as we expected, we find a clearly lively wine, very elegant, subtle and suggestive, with extremely silky tannins, without any stridency, without great intensity but with that powerful length of wines that know how to cling to the hypothalamus and transcend the taste and smell or, as in this case: those that, when drinking them, tell you a part of the history, the history of Bierzo wines.
